Chilled Beancurd Recipe

Last year (2011), Lao Ban Beancurd has lead the craze on Chilled Beancurd. Today, there are several similar stalls such as 51 Soya Bean, QQ Soya Bean Curd and many more popping up. All selling the same type of chilled beancurd!

Many people online have frequently been searching for the 'Lao Ban Beancurd recipe'. Just last month, the recipe was shared on edmw. With that, I went about trying to make it too. 
Phoon Huat's 'Jelly Man Instant Jelly Powder (200g) $4.90
The trick in making the chilled beancurd is the Phoon Huat's 'Red Man Instant Jelly Powder'. I bought the small bottle, 200g at $4.90.
Ingredients Required
Other than the fact that the Instant Jelly Powder can be bought from Phoon Huat, the rest of the ingredients can be bought from NTUC. (Not all outlets in NTUC has Polleney Soya Bean Milk Powder)

Items required: 
1) Pot
2) Whisk
3) Sieve
4) Measuring Cup
5) Measuring Teaspoon (tsp) and Tablespoon (tbsp) or Measuring Scale
6) Bowls or Plastic Containers
*as I do not have measuring scale I will estimate the number of tsp or tbsp required.

To make Soya Milk (3 bowls):
60g of Polleney Soya Bean Milk Powder (2 tbsp + 1 tsp)
30g of Unisoy Soya Bean Milk Powder
700ml of Water
Stir to ensure that all the powder are dissolved. Ensure that there are no lumps.

To make Chilled Beancurd:
700ml of Soya Milk (or Drinho/Vitasoy/Yeo's/Seasons Soya Milk)
30g of Nestle Coffeemate Coffee Creamer (6 packets)
30g of Sugar to taste (not required if using carton-ed Soya Bean Milk) (2 tbsp)
14g of Phoon Huat's Instant Jelly Powder (2.5 tsp)

Steps:
1) Heat the Soya Milk in low heat till it is hot (Do not boil)
2) Add in coffee creamer and stir till it is fully dissolved
3) Add in Sugar and stir till it is fully dissolved
4) Do a taste check for sweetness level
5) Add in Instant Jelly Powder and stir till it is fully dissolved
6) Sieve out the bubbles
7) Pour into 3 bowls and leave to cool
8) Put in fridge for at least 3 hours and after that it is ready. Enjoy the Beancurd

Tips:
1) Keep stiring to ensure that the ingredients are fully dissolved. Using a whisk is better compared to a spoon/fork/chopsticks. This is to ensure that the Beancurd will not have 2 layers. (which was what happen to my first attempt)
2) Too much Instant Jelly Powder will result in the Beancurd being too hard (which was what happen to my first attempt)
3) Ensure you do a taste test before adding in Instant Jelly Powder. Add more sugar if required.
4) Pure Soya Bean Extract from Vitasoy did not really work as the taste was not right

My own chilled beancurd using the above recipe. Smooth, jelly-like and silky. Very similar to 51 Soya Bean taste. But not Lao Ban standard.

    Yes, this should be possible or using tea bags to get the flavours. After all (way before this new type of beancurd came out), there's a stall in chomp chomp which sells beancurd that has different flavours such as honeydew, yam...

  4. This can't be right. How can 60g of polleney translate to 2tbsp + 1tsp and 30g of of sugar translate to 2tbsp? 1tsp is 30g?

  5. Hi,

    because polleney and sugar has different density. E.g. for the same volume, different items do not weigh the same. I do not have a weighing scale that can measure so accurately. Hence, have to resort on measuring table/teaspoons. This is the best estimate I have so far.

    How do you get a white-ish product as a result? Once I mix in all the ingredients, mine is a bit yellowish because of the soybean powders.

    And may I please ask how long you cook it for?

    Finally, how may tbsp / tsp does 30g of Unisoy translate to. Don't have a weighing scale :~(.

    You might have added too much polleney or your proportion of coffeemate and water is too little.

    The Unisoy I used, 1 packet is 30g. Hence, there was no need for weighing scale.

  11. Hi, anyone tried the soya beancurd at Blk 2, Upper Aljunied Lane? think their company name is House Of Yi Kang Dessert. Their soya beancurd is really good too. Heard from their boss, they uses pure soya bean milk to do their beancurd. I like theirs. Real smooth but its $2.00 for original. But i think the quality is worth it. Try it.

    1. Tried the beancurd. Theirs is really made from soya beanmilk and more to the beany and padan taste. Very smooth and not taste like pudding. I like this much more than the pudding type as the pudding type is more fattening and sweet due to the ingredient used. Heard that the leased is expiring soon and will be moving to a new location. Will let you know once they have confirmed the new location.

  12. mine is still watery.. is it becoz i added too little amount of the jelly powder? coz when i pour it out of the container, i see the small lumps. is it becoz i did not whisk it enough to be fully dissolved?? i wanna give it another try..

    1. If you see lumps, it is more likely that you did not whisk enough. Have to keep whisking.

      After trying this, if you find that there is no lumps, but it is watery, try using a bit more jelly powder.

    I followed your recipe and the result was great. I did away with the sugar. I boiled ginger with water and gingko nuts and added it into the bowl of bean curd, top off with brown sugar. Thanks for sharing

    Can I use only Unisoy Soya Bean Milk Powder 90g to make soya milk? what is the purpose to mix Polleney Soya Bean Milk Powder and Unisoy Soya Bean Milk Powder?

      yes that is possible. The mixture is just for taste. Hence, you can tweak it, or use other soy milk according to personal taste preference

  16. Some people say the nice fragrance might be due to vanilla that was added. You can try adding in fresh vanilla pods to see if it works! ^-^

  17. Hi, I am so addicted to Organic beancurd at ISLE CAFE, There are 3 branches i know: at Orchard Tower coffee shop basement, food stall at Far East Plaza and Peace Centre 3rd floor. Do you have any idea how
    they made it? since i have tried their beancurd, i do not like the beancurd at lao ban, rochor or others normal beancurd, as the one from Isle Cafe is soooooo smooth, nothing like others beancurd stall.

    Isle Cafe beancurd has 3 flavour, original, almond and greentea, which is my favorite.

    I do hope anyone knows the recipe.

    I followed the instructions with 700ml and i tablespoon of instant jelly but it was still too soft! :( was wondering what should the texture look like once everything is all mixed in? For example, should the mixture slide down slowly from the spoon? or be a bit more watery? So that at least i know what to look out for and if i should add more instant jelly powder..thanks! hope to try out tonight again so hope to see ur reply! :)

    1. Hi (just came home, did not managed to reply this on time. Its 12mn now)

      It should be 14g of Phoon Huat's Instant Jelly Powder (2.5 tsp). Not one tablespoon.

      It should be soft, smooth and pudding like. Yes, it should slide down the spoon.

      If its too soft for your liking there's two ways
      1) add more jelly powder
      or
      2)add more proportion of soya bean powder.

  21. Hey, i tried this last night, and this morning when i took it out from the fridge, it is still watery:( i heated it all the way while adding the creamer and jelly powder. Was that wrong?:/

  22. Most likely it's e amt of your ingredients. Try adding in slightly more jelly powder
